Breakfast tacos in bed...sign me up 🙆🏻🙋🏻‍♀️😋. Happy Saturday friends. . . Scrambled 2 @vitalfarms eggs with @primalpalate steak seasoning and loads of spinach. Added to @sietefoods cassava grain free tortillas with some turkey bacon and avocado chunks. Simple yet oh so delicious 👍🏻
Going into the weekend with a fresh batch of my pumpkin pie collagen snickerdoodle cookies😋. . . Pumpkin pie snickerdoodle collagen cookies 1/2 cup almond flour 1/2 cup coconut flour 2 tsp @primalpalate pumpkin pie spice 1 1/4 tsp baking soda 3 scoops @vitalproteins unflavored collagen peptides (optional) Pinch of Celtic sea salt 6 Tbsp @chosenfoods chosen blend oil (or use coconut oil) 3 Tbsp maple syrup 2 tsp vanilla extract 4 @vitalfarms eggs 1/2 cup organic pumpkin purée Coconut sugar + cinnamon . Mix the wet ingredients in a bowl and then add in the dry and mix well. Let dough sit in fridge for 10-15 min, roll into balls, then roll in coconut sugar + cinnamon and add to baking sheet lined with parchment paper.Bake 350 for 10-12 minutes (I did mine for 10 in my convection oven). . #mhkbakes
20 minute one pan chicken stir fry is where it’s after a busy day at work😴. I’m just happy tomorrow is Friday! . . Chicken stir fry 2 organic chicken breast chopped 2 lemons juiced 4 Tbsp coconut aminos 1 drop of sesame oil 1 Tbsp garlic chili sauce 1 tsp minced raw ginger 1 tsp garlic powder 1 tsp coriander Salt and pepper to taste 1/4 red onion diced 1 Tbsp avocado oil Asparagus, red bell pepper, broccoli, carrots . Marinate your chicken with lemon juice, coconut aminos, sesame oil, chili sauce, ginger, and seasonings for 10 minutes. . Then sauté your red onion with avocado oil and cook for a few minutes. Add in chicken and cook through (about 10 minutes). Then add your veggies, cover pan and cook for another few minutes. Serve along with basmati rice!
Comfort food at its finest right here...tomatillo chicken enchiladas with @sietefoods cassava and coconut grain free tortillas. #mhkmealprep . . Tomatillo salsa 8-10 tomatillos 1 Pasilla chili 1/2 yellow onion 4 garlic cloves 2 Tbsp @chosenfoods avocado oil Pinch of Celtic sea salt Handful of spinach Add everything (except spinach) to a baking sheet lined with parchment paper Roast everything on 400 for 25-30 minutes. Then transfer to blender and add spinach and blend on low. Optional add in: bone broth to thin salsa out or filtered water. . For enchiladas 2.5 chicken breast 1 cup tomatillo salsa (see above for recipe) 1/4 cup @bonafideprovisions chicken bone broth 6 @sietefoods cassava and coconut grain free tortillas 1/4 cup @organicvalley pasture raised Mexican blend cheese and 1/4 cup @organicpasturesdairy Cheese. . Add your chicken breast, tomatillo salsa,bone broth to your instant pot. Cook on poultry setting for 30 minutes. Once done shred and Add mixture to tortilla along with some cheese, red onion, and roll up. Add to a baking dish with some tomatillo salsa on bottom, then top with more salsa, and cheese, Bake 350 for 10-15 minutes. Top with cilantro, cherry tomatoes, and avocado.
Nothing better on this rainy cozy day than some nourishing black bean soup! I prepped this In my @instantpotofficial and I can’t get over how quick and easy it was to prep. . . Black bean soup Serves 4 . 2 cups black beans soaked in filtered water over night 1/4 onion diced 1 Tbsp @chosenfoods avocado oil 1 bay leave 1/2 tsp Cumin 1/4 tsp smoked paprika 1/4 tsp coriander salt + pepper to taste 2 gloves garlic minced 1 package of @bonafideprovisions turkey bone broth (use veggie broth if wanting it to be vegetarian or vegan) 3-4 cups filtered water . Set the sauté function on your instant pot, add avocado oil and sauté your onions for a few minutes. Add in garlic, and seasonings and mix for a couple minutes. Add in beans and broth, cover pot, switch function to soup and cook for 10 minutes. Once done let it sit for 20 minutes and let the pressure realize naturally by pressing cancel after 20 minutes of sitting. Top with avocado! . #mhkmealprep

Prepped some more of my peppermint matcha energy bites because they are the perfect pick me up ?. What are your go to’s for that afternoon slump?!? . . . . . Peppermint matcha energy bites: 1 cup medjool dates 2 scoops @vitalproteins matcha collagen 2 Tbsp raw coconut shreds 2-3 Tbsp MCT oil 2 Tbsp cacao nibs 1 tsp peppermint extract 1 cup raw almonds 2 Tbsp @ommushrooms lions mane . Optional add in 1 scoop @ora.organic vanilla plant based protein powder . Process everything in food processor, if it’s too crumbly add 1 Tbsp at a time of filtered water. If too wet you can add in some more matcha or optional add in. Roll into balls and store in freezer or fridge. . #mhkblissballs

Instant pot bbq chicken with only 3 ingredients is a game changer! . . 2 frozen chicken breast, 1/2 of a bottle of @stevespaleogoods peach bbq sauce, 1/2 cup @bonafideprovisions chicken bone broth, salt + pepper. Cook on poultry function for 35 minutes and let pressure release on its own. . . Don’t have an Instant pot, bake in oven 350 for 30 minutes. . #mhkmealprep

Banana bread 2 ripe bananas 3 @vitalfarms eggs 2 cups @bobsredmill almond flour 2 Tbsp @bobsredmill flaxseed meal 2 Tbsp maple syrup 1 tsp vanilla extract 1 Tbsp baking powder 2 tsp cinnamon 1 tsp nutmeg 2 scoops @vitalproteins unflavored collagen peptides (optional ) . . Blend everything in blender. Pour in a lined loaf pan. Bake 350 for 35-40 minutes (I did 38 minutes in my convection oven).
