Banana Bread blondies
Makes 9 large squares (makes more if you cut into smaller squares)
2 large pasture raised eggs
1 tsp vanilla extract
1/4 cup coconut oil melted
2 ripe bananas
1/2 cup maple syrup
3/4 cup almond butter
Optional: 2 Tbsp flaxseed meal
1 cup Almond flour
1/2 cup Coconut flour
Pinch of Salt
1 tsp Cinnamon
1/2 tsp nutmeg
1 tsp baking soda
1/2 cup chopped chocolate + 2 Tbsp for topping
Sprinkle of flaky salt for topping
Instructions
1. Mix wet ingredients
2. Add dry ingredients and mix
3. Fold in chocolate chips
4. Add to a lined 8x8 baking dish and top with more chopped chocolate
5. Bake 350 for 20-25 minutes or until a toothpick comes out clean
6. Sprinkle flaky salt on top
7. Let cool for 15 minutes and cut into squares
