"Summertime delight with some churro snickerdoodle cookie ice cream sandwiches😋. One of my favorite combinations and super easy to prep a big batch and have them stocked in your freezer. _ Churro snickerdoodle cookies 2 Tbsp flaxseed meal 2 Tbsp cashew mylk (or any nut mylk you have) 3 Tbsp almond butter 3 Tbsp coconut oil 1/2 tsp vanilla extract 1 tsp @primalpalate cinnamon sugar cookie seasoning (sub cinnamon and coconut sugar) 3/4 cup almond flour 1 Tbsp tapioca flour 1/3 cup coconut sugar 1/4 tsp baking powder 1/4 tsp baking soda Pinch of sea salt Instructions 1.Mix wet ingredients 2.Add dry ingredients to wet, mix, and let sit in fridge for an hour 3. Roll into balls, roll into more @primalpalate cinnamon sugar cookie seasoning (sub coconut sugar + cinnamon) 4. Add to a baking dish lined with parchment paper, and flatten with a jar or hand. Bake 350 for 9-11 minutes. 5. Let cool completely and then add some dairy-free vanilla bean ice cream in between two cookies, and place in freezer 6. Devour! 7.
