This Asparagus Pasta is super simple and packed with flavor! Roasted garlic and asparagus get blended with fresh basil and olive oil to make a smooth, herbaceous pesto! Add it to your favorite pasta and sprinkle on some cheese for an easy weeknight dinner

  • 1 pound fresh asparagus
  • 4 cloves of garlic
  • 1 tablespoon olive oil
  • 2 big handfuls basil
  • 1/4 cup olive oil
  • salt, to taste
  • pepper to taste
  • juice of one lemon
  • 2 1/2 cups dry pasta
  • sprinkle of vegan cheese, or your favorite cheese


  • Step 1

    Cut off asparagus stems and place on a sheet try with garlic and tablespoon of olive oil. Bake 350 degrees for 20mins.

  • Step 2

    Boil the pasta in salted water, following directions on the box. Be sure not to overcook.

  • Step 3

    Blend the roasted asparagus/garlic in a food processor with basil, salt, pepper and olive oil until smooth.

  • Step 4

    Assemble the pasta in a bowl and pour pesto on top, stir to coat the pasta and sprinkle with cheese of your choice (optional).
