This Asparagus Pasta is super simple and packed with flavor! Roasted garlic and asparagus get blended with fresh basil and olive oil to make a smooth, herbaceous pesto! Add it to your favorite pasta and sprinkle on some cheese for an easy weeknight dinner!

- 1 pound fresh asparagus
- 4 cloves of garlic
- 1 tablespoon olive oil
- 2 big handfuls basil
- 1/ 4 cup olive oil
- salt, to taste
- pepper to taste
- juice of one lemon
- 2 1/ 2 cups dry pasta
- sprinkle of vegan cheese, or your favorite cheese
Cut off asparagus stems and place on a sheet try with garlic and tablespoon of olive oil. Bake 350 degrees for 20mins.
Boil the pasta in salted water, following directions on the box. Be sure not to overcook.
Blend the roasted asparagus/garlic in a food processor with basil, salt, pepper and olive oil until smooth.
Assemble the pasta in a bowl and pour pesto on top, stir to coat the pasta and sprinkle with cheese of your choice (optional).
