A good banh mi is something I could eat over and over and over again. At their core, they're just sandwiches, but oh what sandwiches they might be! Light and crisp crusts with soft and fluffy, cloud-like insides, Vietnamese baguettes are the perfect bed for rich, savory meats, sweet and sour pickled carrots and daikon, fresh cilantro and spicy jalapeños. Banh mi can be classy and classic or brash and new. I like them all!
