Meatballs:
ingredients
- 2 tablespoons vegetable oil
- 7 cloves garlic, minced
- 1/2 can (3 ounces) tomato paste
- 2 cups lukewarm water
- 2 tablespoons sugar
- 2 tablespoons fish sauce
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pack (12 count) Crave House Meatballs
Pickled Vegetables:
ingredients
- 1 large carrot
- 1 large daikon radish
- 1 1/4 cups distilled white vinegar
- 1 cup lukewarm water
- 1/2 cup + 2 teaspoons granulated sugar
- 1 teaspoon salt
For Serving:
ingredients
- French bread, toasted
- cilantro
- 1 cucumber, peeled and sliced
- 1 jalapeno, sliced
For the Meatballs:
Method
Step 1
Heat oil in a deep pan over medium-high heat. Add minced garlic and cook until browned.
Step 2
Reduce heat to low. Add tomato paste, stirring until combined. Add water, sugar, fish sauce, salt and pepper. Mix until dissolved.
Step 3
Carefully place Crave House Meatballs into pot 1-inch apart. Simmer uncovered for 20-30 minutes or until the sauce reduces into a thick sauce. Carefully flip meatballs, coating with sauce.
For the Pickled Vegetables:
Step 1
Peel and shred carrot and daikon. Add to a large heat-proof jar.
Step 2
Mix vinegar, water, sugar and salt in a large bowl until dissolved.
Step 3
Pour pickling liquid into jar until vegetables are completely submerged. Cover and refrigerate overnight. The pickles will last up to 3 weeks in the refrigerator.
To Assemble:
Step 1
Assemble sandwiches on French bread with meatballs, pickled vegetables, cilantro, cucumber and jalapeño.
