Stuffing/Dressing

Cube your bread a few days ahead and let it sit out before preparing your stuffing. It may seen counterintuitive, but dry, stale bread makes the most flavorful stuffing since the bread gets primed to really soak up all the flavor. To Stuff or Not to Stuff

We don't. Instead we add just a few aromatics like lemon halves, onions and fresh herbs and bake our stuffing separately. If you choose to stuff your bird, it will take longer to cook as you'll need to get the stuffing to 165Ë F to be safe, which makes overcooking the rest of the turkey more likely.

\n\n\n\n\n\n\n

Should you Fuss with Trussing?

Yes! Trussing your turkey will make it more compact, and therefore allow it to cook more evenly.

Place the bird breast side up on the counter. Take wings and flip the first joint under the body of the turkey. Youâll have to use a bit of force here. It may take a couple tries, but eventually you will be able to get the first wing joint nestled neatly under the body of the turkey.
Take the Turkeyâs legs and cross one over the top of the other. Using kitchen twine, tie the legs together by making a figure-eight around both legs and then securing it tightly.

Brined or Simply Roasted?

This is one of most fiercely debated Thanksgiving issues. We're going to have to remain neutral here and say there are advantages to both. If you do brine, make sure to read your recipe of choice ahead of time as most require you to start the process about 48 hours in advance. If you are using a wet-brine make sure you choose a vessel large enough to fit both the turkey and the liquid and that said vessel can fit in your fridge (we've made this mistake before and it wasn't pretty!).

\n\n\n\n\n\n\n

Baste, or waste of time?

Sorry to all the Turkey purists out there, but we think it's a waste of time, and temperature. Opening the oven numerous times throughout the day will dramatically affect the temperature inside which can lead to slow-cooking turkeys. We do like to baste the turkey a few times in the last hour or so of cooking when the fat from the turkey is fully rendered, which helps to brown and crisp the skin.

\n\n\n\n\n\n\n

When is it done?

Use an instant read thermometer! To kill harmful bacteria a Turkey needs to reach 165Ë F. We like to take our bird out when the temperature (taken by inserting the thermometer into the thickest part of the thigh, without touching the bone) reaches about 155Ë F. Carry over cooking will bring the bird to the proper temperature while it rests.

Stock

Don't get us wrong, we love a good stock in a box, but finding turkey stock (which we prefer to use on Thanksgiving) can be tricky. We like to enrich chicken stock in a box or even homemade stock you have in the freezer with carrots, celery, onions, aromatics and bone in turkey breast to create a more authentic stock for Thanksgiving. The bone in turkey will add collagen and body to the stock, making every dish you include it in that much better. Simmer the stock for as long as possible, the longer the better, and be sure to skim off any fat or impurities that rise to the surface while cooking. When you're finished, strain the stock through a fine mesh strainer and store in freezer save jars or containers, making sure to leave a bit of room for expansion when it freezes.

Pie dough freezes incredibly well, so there's no need to wait until the last minute to make it. Just make sure it's wrapped tightly to protect it from freezer burn.

makes 3 double crust pies, or 6 single crust pies

Ingredients
7 1/2 cups All Purpose Flour
1/2 cup granulated sugar
4 tsp salt
2 1/4 cups butter, cubed
1 cup ice cold water
1 cup ice cold vodka (straight from freezer works best)

To make the dough, set the cubed butter in the freezer for at least one hour before making the dough. When butter is frozen, add 4 cups of flour, sugar and salt to a food processor. Pulse a few times until well combined. Add butter and process until incorporated and the butter is broken into pea-sized clumps. Add the remaining flour and pulse a few times.

Dump contents of food processor into a large bowl then drizzle water and vodka over the flour mix and fold together gently until the dough starts to come together, adding more ice water by the tablespoon if needed. Gather into a ball, then divide into 6 portions. Form dough into discs and wrap with wax paper or plastic wrap and place in a freezer safe baggie. Set in the freezer until ready to use. Just thaw in the fridge overnight the day before you want to assemble the pie.

We go cranberry picking in wild bogs near our home in Amagansett each Fall. As soon as we get home, we freeze the cranberries and use them throughout the long winter in this cranberry sauce, in chutney and in cranberry orange scones. Flavored with Simply Organic spices, this sweet, tart & warmly spiced cranberry sauce is sure to become a new holiday favorite!

Ingredients

1 12 oz package fresh cranberries (about 3 cups)

1 apple, chopped

¾ cups red wine

½ cup sugar

¼ cup maple syrup

½ tbsp freshly grated ginger

½ tsp salt

Juice & zest of one lemon

Juice & zest of one orange

¾ tsp ground cinnamon

¼ tsp ground nutmeg

Pinch ground cardamom

Pinch ground cloves

Pinch allspice

Pinch black pepper

Directions

Combine all ingredients in a medium sauce pot and bring to a boil. Reduce heat to a simmer and cook for about 15 minutes, mashing the cranberries with the back of a fork as they cook.

Let cool for about 15 minutes, then check for seasoning, adding more salt, pepper or maple syrup as needed. Store in a airtight jar for up to three days before serving.

A few years ago I was inspired by a post from @whiskandwhittle and decided to add a new dessert to my Thanksgiving line-up. Experimenting with a new recipe on a holiday can be risky, but this was a huge hit in my housefold! It's become a new family tradition, and every time we make it we harvest wild cranberries from the Walking Dunes near our home in Amagansett. I hope you enjoy the recipe and add it your list of go-to holiday desserts as well!

Ingredients

Pie Crust:

1 3/4 Cups Whole Wheat Flour

1 Tbsp Granulated Sugar

1/2 tsp Salt

12 Tbsp Unsalted Butter, cold, cut into ½ inch cubes

3 Tbsp Vodka on Ice

1 tsp Lemon juice

Pastry Cream

2 Cups Milk

1/2 Cup Sugar

1 Egg

2 Egg Yolks

1/4 Cup Cornstarch

1 Scraped vanilla bean

2 Oz Butter

Cranberry Filling

3 cups Fresh Cranberries

1/2 Cup Orange Juice

1/2 Cup Water

3/4 Cup sugar

1 Cinnamon Stick

1/2 teaspoon of thyme

pinch of salt

Egg Wash

1 egg yolk whisked with 1 Tbsp Heavy Cream

Coarse sugar (for sprinkling)

Directions

Pie Crust:

Combine flour, sugar and salt in a bowl. Cut butter into flour until the mixture resembles coarse crumbs. The butter cubes should be about the size of a pea. Slowly pour the vodka and lemon juice over the butter and flour mixture. Using a fork, incorporate the liquid into the dry ingredients . Knead dough a bit so all of the shaggy pieces come together. Shape the dough into a disc, wrap it in plastic and refrigerate for at least 30 minutes.

Meanwhile, prepare Cranberry Filling:

Combine all of the ingredients in a saucepan and cook on medium-low heat. Stir until berries start to split and juices start to thicken. When the mixture coats the back of a spoon, remove from the heat and let cool.

Pastry Cream Filling:

Start by getting everything ready: Place two cups of milk in a medium saucepan with ¼ cup sugar and the vanilla bean. Whisk the remaining 1/4 cup sugar with the cornstarch in a large bowl.

Add egg and yolks to a small bowl. In another large bowl, add butter and place a mesh strainer over it.

Slowly heat milk just until bubbles start to form around the edges of the pan.

Whisk egg mixture into cornstarch, and while still whisking, slowly add the milk. You are tempering the eggs in this step, so take care not to rush, or you will scramble the eggs.

Pour the mixture back into the pot, and stir with a rubber spatula, making sure to scrape to bottom of the pan so nothing sticks to it. When the mixture starts to thicken (and look like pudding) remove from heat.

Strain the custard through the mesh strainer into the bowl with the butter. Stir until the pastry cream is smooth and the butter is incorporated. Place over an ice bath and stir while it cools (you don’t want to let a ‘skin’ form on top, so make sure to stir every once in awhile).

Pie Assembly:

On a floured surface, roll out dough to ¼” thick, in a round shape that is about 2 inches wider in diameter than your pie dish. Add to pie dish and crimp edges. Spread pastry cream over the prepared dough and top with cranberry mixture. Let pie chill in fridge while you preheat the oven to 375 degrees F. When oven is preheated, brush exposed pie dough with egg wash and sprinkle with sugar. Bake for about 30-40 minutes, until crust is nice and golden brown.
