Tis the season for apple tarts. Not that I'm baking any just yet. I'm so desperate to move back into our house I can't stand it...I miss my kitchen beyond words. And when I get back in it one of the first things I'm going to do (after setting up our nursery!!) is order pink apples & wild mushrooms from @mikuniwildharvest. I have this muscatel vinegar (my new favorite vinegar...move over sherry) I've been dying to try with mushrooms & ricotta gnudi, and I've been dreaming of these rosey apples all year.

It was a staple long before pregnancy, and it's super quick & easy to whip up. While great for expecting & nursing moms (nutritionally amazing), it's equally as satisfying for spicy food lovers & fans of the Japanese pantry. I eat this soup with a glass of cold milk to temper the heat of the chili paste & togarashi powder in the recipe & to compliment it with a creamy sweetness next to the intense umami. F
