Meal Plan: July 10th

(1)

The summer season is in full swing! That means vacationing (or going on holiday, depending on where you are from!) and taking advantage of the nice weather wherever you may be. Here is a straightforward menu starring a light and lovely Temari Sushi to serve as inspiration for the rest of the week; this is just what you want for dinner on a hot summer night. The beauty of these simple recipes is that they can be adapted to include some extra seasonal produce if you’ve got it!

This tomato-and-pepper-based gazpacho epitomizes summer, so enjoy it while tomatoes are ripe and in season! You can make a big batch of this soup and freeze it to enjoy throughout the year.

Enjoy this simple chickpea pasta and traditional roasted crispy chicken thighs for the remainder of the week.

Kids and adults will be thrilled by these Watermelon Yogurt Bowls, perfect for breakfast or a healthy dessert!
