Spice Roasted Cauliflower with Roasted Garlic Hummus and Tahini Drizzle

Serves 6



For the Cauliflower:

1 head of cauliflower, leaves removed, stem end trimmed to a flat surface
1 tbsp olive oil
1 tsp Simply Organic Chili Powder
½ tsp Simply Organic Turmeric
½ tsp Simply Organic Ginger
¼ tsp Simply Organic Cumin
¼ tsp Simply Organic Crushed Red Pepper Flakes
Salt and pepper, to taste
1 lemon, halved


Lemon Tahini Sauce

3 tbsp tahini
3 tbsp yogurt (greek or plant based)
Juice of one lemon
1 clove roasted garlic (recipe below)


To Assemble:

Homemade Hummus (Recipe Below)
Fresh parsley, chopped
Fresh Pomegranate Arils



Preheat the oven to 450˚F. Combine the olive oil, spices and salt and pepper in a small bowl. Place the cauliflower head in the center of a cast iron skillet, and brush the entire head with the olive oil mix. Add the halved lemon to the skillet cut side down, then place in the oven. Remove the lemon after about 20 minutes of cooking time, but let the cauliflower roast for 50 minutes to one hour, or until the cauliflower is gold brown on the exterior and tender in the center. You can check the tenderness by inserting a skewer into the center of the cauliflower. It should pass through easily.


While the cauliflower roasts, make the hummus (recipe below) and tahini sauce. To make the tahini sauce, add all ingredients to a small bowl and whisk until smooth.


When the cauliflower is tender, remove from the oven and let cool slightly.


To serve, spread the prepared hummus on a serving platter, then add the cauliflower. Drizzle with tahini sauce, parsley and pomegranate arils. Slice portions of the cauliflower with a sharp chef's knife and serve.


Homemade Hummus


2 cans chickpeas
3 roasted garlic cloves
zest of 1 lemon
3 lemons, juiced
1/4 cup tahini paste
couple dashes of hot sauce of choice (optional)
1 tablespoon olive oil
kosher salt, to taste (add one teaspoon to start and add more as needed)
freshly ground black pepper
Pinch of Simply Organic smoked paprika, plus more for garnish




In a high-powered blender or food processor add 1 can of chickpeas (with liquid) and other can, drained and rinsed. Add garlic, lemon juice, tahini and hot sauce (if using). Blend for about 1 minute, or until mixture begins to look smooth. Slowly pour in the olive oil (with the machine running) and continue to blend until it reaches your desired consistency (for silky smooth hummus, about 2 minutes), adding water a little at a time if needed. Season to taste with salt, pepper and smoked paprika. Garnish hummus with a pinch of smoked paprika and a drizzle of olive oil before serving

Roasted Garlic


1 head of garlic
Olive Oil, as needed


Preheat the oven to 400°F.

Peel off the outer layers off of the garlic head. Using a sharp knife, cut the tops off of the garlic head, approximately 1/4 inch, until the bulbs are exposed.

Set garlic head on a sheet of foil, and drizzle with 2 teaspoons of olive oil. Wrap completely in the foil, and set on a baking sheet. Repeat with remaining garlic heads.

Bake in preheated oven for 60 minutes, or until cloves are extremely soft and brown. Serve on crostini with tomatoes and flaky sea salt, add it to vegetables, mix into a salad dressing, make a roasted garlic hummus, or eat it plain!
