Ingredients:
Brownie
2 cups + 2 tbsp walnuts, chopped and divided
1 egg
1 teaspoon vanilla extract
1/3 cup pure maple syrup
1/4 cup cocoa powder (unsweetened) I used this one.
1/2 teaspoon baking soda
A pinch of salt
1/2 cup Dark 70% chocolate, chopped + 2 tablespoon for topping
1 teaspoon coconut oil
Chocolate Drizzle
1/4 cup dark 70% chocolate, chopped
1 teaspoon coconut oil
Directions:
Preheat oven to 350 F.
Place 2 cups chopped walnuts on a baking sheet and toast them in the oven for 8 minutes or until slightly toasted. Allow walnuts to cool on baking sheet for 5 minutes or so.
Place walnuts in the Vitamix bowl and blend for about 1 minute in low speed. Turn off the machine and scrape down the sides if necessary. Turn on again and blend until smooth. The walnuts need to be creamy like nut butter.
Then transfer walnut butter to a medium glass bowl and add in egg, vanilla extract, pure maple syrup, cocoa powder, baking soda and salt.
Mix everything well until smooth. Fold in chopped chocolate.
Pour brownie batter to two 6 1/2-inch skillets coated with coconut oil. Sprinkled walnuts and chopped chocolate on top. Bake for 15-18 minutes or until a toothpick is inserted in the center and comes out clean
To make the chocolate drizzle: In a small saucepan over low heat, add chopped chocolate and coconut oil. Stir until completely smooth and melted. Using a spoon, drizzle the melted chocolate all over the brownies. Cut into 4 slices. Enjoy!
