Step aside avocado toast! This week we are celebrating ideas for incorporating avocados into your dinnertime routine. From adding creaminess to grain bowls to jazzing up springtime salads, we hope you’re inspired to rethink this humble fruit (yes, it’s a fruit!)

We love avocados year-round, but did you know they have a season? Avocados grown in Mexico hit peak volume in the wintertime, California in the spring and Florida in the summer.

Roasted chicken is Sunday meal prep at it’s finest! With a little bit of prep and a hot oven, you can get dinner on the table in under an hour. Leftovers can get repurposed for tomorrow or thrown on salads for quick lunches.

Causa Rellena - Peruvian Potato Cakes with Chicken, Avocado and Tomato by @andrealoretdemola

Shred any of the left over chicken from last night’s dinner and use it to transport yourself to Lima, Peru.
