Thanksgiving has always been my favorite holiday, but even more now that I am able to cook the entire meal from local ingredients. I always make my pumpkin pies from farm fresh Quail Hill Farm roasted pumpkins and Amber Waves Farm whole wheat flour. The trick is to roast the pumpkin the day before you plan to bake it and then set it into a fine mesh colander with a dish underneath to drain overnight to remove the excess water.
