  • 1 cup unsalted butter, regular or browned if desired
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 1 cup pumpkin puree
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon kosher salt
  • 1 large egg
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon pumpkin pie spice
  • 1 1/2 cups chocolate chips
  • 7 ounces marshmallow fluff

Method

  • Step 1

    Preheat the oven to 350°F. Spray a baking pan with nonstick spray, or line it with parchment paper.

  • Step 2

    In a medium bowl, mix together the flour, baking powder, and pumpkin spice. Set aside.

  • Step 3

    In a large mixing bowl, combine the melted butter and both sugars until well combined.

  • Step 4

    Add in the egg, pumpkin puree, vanilla, and 1/2 teaspoon of kosher salt. Mix until well combined.

  • Step 5

    Sift in the flour mixture and stir until just combined. Be careful not to over mix.

  • Step 6

    Pour about 1/3-1/2 of the batter into the prepared pan and spread it to the edges.

  • Step 7

    Add a generous layer of chocolate and marshmallow fluff on top of the batter.

  • Step 8

    Spread the rest of the batter on top to cover the chocolate and marshmallow layers.

  • Step 9

    Bake for about 45-50 minutes. The bars are done when a toothpick inserted into the center comes out with no wet batter on it. (Baking time may vary depending on the pan size you use, so keep an eye on them.)

  • Step 10

    Allow the bars to cool before lifting the parchment paper from the pan and slicing them into 12 squares.
