A Note From Erin Clarkson

Although its roots are heavily influenced by its colonizer Britain, New Zealand cuisine has quickly evolved into a niche of its own. Drawing on the abundance of fresh produce, meat and dairy that the country provides, meals often reflect the seasonality in both ingredients and location, a Sunday roast or a backyard BBQ. New Zealand also has a number of iconic baked goods, such as the pavlova and lamingtons. Some more familiar than others, these are slowly making their way into the repertoire of foodies worldwide. I hope that this feed gives you a little insight into this niche, and provides you with some amazing inspiration.

Chocolate Self Saucing Pudding

Chocolate self saucing pudding - a quick cake mix, sprinkled with Cocoa and brown sugar, dotted with butter, then covered in boiling water. The result: self saucing chocolate pudding! This was a staple growing up. I haven't had it for a few years but it's definitely going to become a staple again. Total comfort food when I need a taste of home.(I promise it tastes way better than it looks!!)

Sometimes I get asked what we refer to as 'pudding'. It is a very tricky question to answer - while we refer to the entire dessert course as pudding, there are also 'puddings' such as steamed pudding and chocolate self saucing pudding (very different to the american version of chocolate pudding). It could be said that it was just a sweet thing, then yorkshire puddings and black pudding come to the party and make it extra confusing. Either way, pudding in most of its forms is the best. This one is more of a cake batter which is sprinkled with cocoa and brown sugar, then boiling water poured over it, resulting in a cake-like mixture surrounded by its own sauce - self saucing pudding!

Don't be deceived by the pile of forks next the the very last piece of the exquisite Pavlova, I have no intention of sharing! And, as this is mostly heavenly meringue, I can pretend it's quite virtuous. Thank you Erin and Richard @cloudykitchen @richardclarksonstudio for bringing such a delicious homemade creation- the passion fruit curd is out of this world! We'll be dreaming of this for a while!!! This was a pavlova that I took to Jill's house for a christmas eve celebration, so it was only fitting to bring a classic NZ dessert! I topped it with some passionfruit curd that I brought back from New Zealand. It went down a treat! I don't have a recipe myself on my site so have linked to my go-to one!

Pavlovas are tricky wee things - they have a tendency to collapse, but thankfully that doesn't make any difference to their taste! You just load them up with cream and top with berries, and you are away laughing! In fact, I am sure that the reason that pavlovas are served loaded up with cream is that they more often than not have a few cosmetic issues on the top (Mine always do anyway!!). Cream only enhances the delicate meringue, and you can top them with whatever you would like!

Meyer Lemon Curd Pavlovas With Blackberry Sorbet

Clouds of purple everywhere. Rest In Peace Prince. Pillowy mini pavlova clouds, topped with Meyer lemon curd, whipped cream, and blackberry sorbet. Dessert today inspired by Prince. As someone who grew up in 1980's(high school thru graduate school) I was enormously impacted by Prince's creative genius, his sense of freedom, his style, and above all else his music. I spent yesterday singing and dancing to his songs. Today, this dessert, to celebrate a man who devoted his life to the thing he loved the most. Clouds of sweet meringue Pavolas from @nigellalawson are topped with @justjansspreads tart Meyer lemon curd, and Gjelina's purple colored blackberry sorbet(for which I am singing to the tune of Raspberry Beret). A delicious #dessert that is sweet, and tart, crunchy, and creamy, with a touch of coolness. A mix of many great things, all different, and all working together to make something magnificent and unforgettable, just like Prince. Thank you for the music and the memories.
