Although its roots are heavily influenced by its colonizer Britain, New Zealand cuisine has quickly evolved into a niche of its own. Drawing on the abundance of fresh produce, meat and dairy that the country provides, meals often reflect the seasonality in both ingredients and location, a Sunday roast or a backyard BBQ. New Zealand also has a number of iconic baked goods, such as the pavlova and lamingtons. Some more familiar than others, these are slowly making their way into the repertoire of foodies worldwide.
