Pavlovas are tricky wee things - they have a tendency to collapse, but thankfully that doesn't make any difference to their taste! You just load them up with cream and top with berries, and you are away laughing! In fact, I am sure that the reason that pavlovas are served loaded up with cream is that they more often than not have a few cosmetic issues on the top (Mine always do anyway!!). Cream only enhances the delicate meringue, and you can top them with whatever you would like!
