  • 2 pounds boneless skinless chicken breast
  • Kosher salt
  • 8 ounces roasted red peppers
  • 1 (10-ounce) can Original Diced Tomatoes + Green Chilies
  • 1/4 cup olive oil
  • 1/2 teaspoon kosher salt
  • 1 shallot, peeled, trimmed and rough chopped
  • 4 cloves peeled garlic
  • Chopped cilantro or parsley, for garnish
  • Cooked couscous or rice, for serving

Method

  • Step 1

    Preheat oven to 400F degrees.

  • Step 2

    Pat chicken dry with paper towels, then season with salt to taste.

  • Step 3

    Heat a drizzle of olive oil over medium-high heat. Sear chicken for about 5 minutes. Flip and cook for an additional 5 minutes.

  • Step 4

    Meanwhile, add roasted red peppers, Original Diced Tomatoes + Green Chilies, shallot, garlic, olive oil, and salt into a blender and blend until smooth. Pour sauce over seared chicken, then transfer to the oven for 15-20 minutes.

    Serve chicken over couscous or rice with a sprinkle of cilantro or parsley and enjoy!
