For me, a good enchilada is all about the sauce. It's got to have heat, and there has to be enough to coat every tortilla, but not so much that it's a soggy mess. Then, there's the cheese. Don't skimp here, you needs LOTS! (Unless of course you are vegan, in which case we have a few awesome recipes below!). Finally, the extras.
