I am thrilled to bring you my own quick recipe for a super easy enchilada bake using a product that I just discovered from @CascadianFarm through @thefeedfeed and now am obsessed with. @CascadianFarm has these really easy #PoweredbyPlants organic, frozen vegetables with no added sauce or seasoning, that make the perfect base for any recipe! I popped into @newfrontiersmarket in Solvang and picked up a bag of the Cascadian Farm Powered by Plants Hearty Blend with Frozen Brown Rice, Corn, Black Beans and Red Pepper with my other groceries!"

ingredients

  • 1 tablespoon olive oil or avocado oil
  • 1 large yellow onion, finely chopped
  • 1/2 pound ground beef, cooked and drained
  • 1/2 pound spicy or mild chorizo, cooked
  • 1 bag Cascadian Farm Powered by Plants Hearty Blend with Frozen Brown Rice, Corn, Black Beans and Red Pepper
  • 2 tablespoons smoked paprika
  • 2 tablespoons cumin
  • 1 tablespoon garlic powder
  • 2 cups red enchilada sauce, homemade or store bought
  • 4 cups spinach, roughly chopped
  • 1 15-ounce can white beans, drained
  • 1 cup Mexican cheese blend
  • hot sauce, for topping
  • avocado, for topping
  • sour cream, for topping
  • cilantro, for topping
  • salsa verde, for topping
  • tomatoes, for topping

Method

  • Step 1

    Preheat oven to 350 degrees F.

  • Step 2

    Heat oil in a large skillet over medium heat. Add onion and cook, stirring frequently until translucent.

  • Step 3

    Add pre-cooked ground beef and chorizo to pan, cook 4-6 min until chorizo browns.

  • Step 4

    Add Cascadian Farm Powered by Plants Hearty Blend with Frozen Brown Rice, Corn, Black Beans and Red Pepper and spices and cook for about 5 minutes, stirring frequently.

  • Step 5

    Remove from heat. Add enchilada sauce, spinach, and white beans; stir to combine. Transfer mixture into a heat-safe baking dish. Top with cheese and bake for 20 minutes. Enjoy with your favorite toppings!
