ingredients
- 1 tablespoon olive oil or avocado oil
- 1 large yellow onion, finely chopped
- 1/2 pound ground beef, cooked and drained
- 1/2 pound spicy or mild chorizo, cooked
- 1 bag Cascadian Farm Powered by Plants Hearty Blend with Frozen Brown Rice, Corn, Black Beans and Red Pepper
- 2 tablespoons smoked paprika
- 2 tablespoons cumin
- 1 tablespoon garlic powder
- 2 cups red enchilada sauce, homemade or store bought
- 4 cups spinach, roughly chopped
- 1 15-ounce can white beans, drained
- 1 cup Mexican cheese blend
- hot sauce, for topping
- avocado, for topping
- sour cream, for topping
- cilantro, for topping
- salsa verde, for topping
- tomatoes, for topping
Method
Step 1
Preheat oven to 350 degrees F.
Step 2
Heat oil in a large skillet over medium heat. Add onion and cook, stirring frequently until translucent.
Step 3
Add pre-cooked ground beef and chorizo to pan, cook 4-6 min until chorizo browns.
Step 4
Add Cascadian Farm Powered by Plants Hearty Blend with Frozen Brown Rice, Corn, Black Beans and Red Pepper and spices and cook for about 5 minutes, stirring frequently.
Step 5
Remove from heat. Add enchilada sauce, spinach, and white beans; stir to combine. Transfer mixture into a heat-safe baking dish. Top with cheese and bake for 20 minutes. Enjoy with your favorite toppings!
