  • 1 bag Alexia Crispy Sweet Potato Puffs
  • 1 pound breakfast sausage
  • 1 tablespoon olive oil
  • 1/2 white onion, diced
  • 1 red bell pepper, diced
  • 6 large eggs
  • 1/2 cup almond milk
  • 1/2 cup shredded cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Method

  • Step 1

    Preheat oven to 350F degrees.

  • Step 2

    Air fry sweet potato puffs for 5 minutes at 400F degrees for 5 minutes, give them a shake, and cook for another 5 minutes.

  • Step 3

    Sauté diced white onion, olive oil, and breakfast sausage over medium heat on a skillet.

  • Step 4

    Break up sausage into small pieces using a wooden spoon until cooked through, about 8 minutes.

  • Step 5

    Spray a large baking dish with nonstick spray and add sweet potato puffs to the bottom layer of the dish.

  • Step 6

    Layer cooked sausage over top.

  • Step 7

    In a mixing bowl, whisk eggs, almond milk, shredded cheese, bell pepper, salt and pepper together. Pour into the dish.

  • Step 8

    Cover with aluminum foil and bake for 25 minutes covered, then another 25 minutes uncovered.

  • Step 9

    Remove from oven and serve immediately.
