Memorial Day is the unofficial start of summer throughout the country. With the weekend quickly approaching, we've rounded up recipes and inspiration for your holiday menu. Whether you're grilling, doing some spring baking or shaking up a cocktail, all of these recipes come from our beloved community members and food editors.

Apps, Salads and Sides
Marinated Snack Board by @thefeedfeed

Whenever we entertain, we ALWAYS put out some kind of board. Whether it's charcuterie or crudités, we love a "build your own" appetizer that anyone can enjoy. This snack board has briny olives, marinated feta and tons of crispy veg to munch on while the grill preheats. 
Chickpea Rotini Salad by @lorindabreeze

This pasta salad is dressed up with a zippy lemon-olive oil vinaigrette and can be made ahead of time. Toss in any extra veg that didn't make it on to your snack board or a can of chickpeas and let everything marinate overnight. Add the arugula just before serving so it doesn't wilt.

 
Blackberry Quinoa Kale Salad with Lemon Vinaigrette by @dianemorrisey

Make a double batch of vinaigrette to dress up this hearty quinoa kale salad. Blackberries add a pop of sweetness, while avocado adds richness for a perfectly balanced bite. This salad is bright, sweet, crunchy and filling!

Portobello Mushroom Steaks with Cucumber Radish Salad by @lindsayeatsla

Mushrooms absorb tons of flavor when seasoned. These "steaks" are quickly marinated with coconut milk, coconut aminos, hot sauce, vinegar and chili flakes, then grilled until charred and crispy. Grill-less? Prepare these in a heavy skillet or grill pan.
 
Reverse Sear Strip Steak Seasonal Salad

"If you are new to the art of the reverse sear, welcome! The principle behind using a reverse sear is to cook the meat low and slow until it gets almost up to your preferred temperature. Once you hit right below your desired final temperature, you remove the meat from the oven and sear it over a screaming hot pan (or grill) to develop a golden-brown crust. The garlic bourbon sauce will be your new go-to steak sauce. Soy sauce, brown sugar, tomato paste, garlic, onion, cilantro and bourbon are simmered until thickened, then brushed over beef and portobello mushroom skewers!

This is a 5-ingredient or less recipe! Chicken thighs are cut into bit sized pieces, marinated with preserved lemon, paprika, salt and then grilled! Serve these up with an herbaceous aioli and fresh lemon wedges.

Salmon holds up well to so many flavor profiles, and this combo with creamy avocado and sweet mango is a winner! Make and shape the salmon burgers one night before that way all you have to do is grill, make the salsa and it's done! Entertaining can be THAT easy.

These shrimp are lightly coated in honey before grilling to develop color and a bit of char. The shrimp are then tossed escabeche style in zesty harissa marinade that is nothing short of addictive.
