"Preserved Lemon Chicken Skewers. It’s good, and easy - I’m not the kind of girl who plans perfect menus. I grab some things, grill and mostly everyone’s sunbathing poolside with a skewer, chicken leg or watermelon slice in their hand. Then a big tub of good ice cream and some waffle cones, yellow box cake with homemade cream cheese frosting...and nobody even cares because it’s all good. ingredients
- 6-8 boneless skinless chicken thighs
- 2 tablespoons smoked paprika
- 2 slices preserved lemon
- Lemon, slices grilled plus juice for serving
- Parsley, for garnish
- Salt, for garnish
Method
Step 1
Cut boneless skinless chicken thighs into bite-sized pieces.
Step 2
Purée smoked hot paprika with 2 slices preserved lemon. Cover and chill for 2 hours, skewer & grill or smoke to 165℉ internal temperature.
Step 3
Grill some sliced lemons too. Sprinkle with parsley, flake salt + grilled lemon juice.
