Rainbow Fried Rice with a Tangy Teriyaki Sauce: 2 cups of cooked rice 1 cup shredded carrots 1 cup chopped purple cabbage 1 cup chopped green bell pepper 1 cup frozen corn 1/2 frozen peas 1/4 cup chopped tomatoes 1/2 cup chopped parsley 1/2 cup thawed vegan chicken 3 tbsp low sodium teriyaki sauce 2 tsp low sodium soy sauce 1/4 cup veggie stock 1 tbsp coconut sugar Juice of half a lemon 2 tsp of like juice Pinch of chili flakes Salt and pepper to taste -In a large non stick pan begin cooking your vegan chicken until golden. On medium/low heat add in carrots, bell pepper, purple cabbage, frozen corn and frozen peas. Cook for about 5 minutes. Add in your sauces, spices, veggie stock, coconut sugar and lemon/lime juices. Stir and let simmer on low heat for a minute. Finally add in your tomatoes and parsley, stir and turn off heat. Serve immediately.
