"Lunch; The perfect excuse to leave your study desk, and procrastinate in the kitchen. Today I made myself a shiitake mushroom fried rice, and topped it with a ridiculous amount of greenery and a runny egg. It was so good, that I cooked up another egg halfway into eating it and added it to my meal so I could prolong the inevitable moment of finishing it. // Shiitake Mushroom Fried Rice: I just soaked about a cup of dried shiitakes in some hot water for 30mins. Then in a pan I sautéed half an onion, some finely sliced organic silverbeet leaves and the mushrooms (without the water) in olive oil. Then I threw in some cooked organic brown rice, a splash of the leftover mushroom water and some soy sauce. Then I just topped it with a free range egg, a tonne of micro herbs from Mumma's garden and a torn up nori sheet."

This fancy fried rice is the perfect way to take some time out at lunchtime. I love the inclusion of shiitake mushrooms and the plentiful addition of micro herbs! And with the egg on top, it is just perfect!

INGREDIENTS

Fried Rice:
1 cup dried shiitake mushrooms
1/2 onion, diced
Organic silverbeet leaves, finely sliced
Olive oil
Organic brown rice, cooked
Soy sauce

Toppings:
Free range egg, fried
Micro herbs
Nori sheet, torn into pieces

DIRECTIONS
Soak dried shiitakes in hot water for 30 minutes.

In a pan, over medium heat, sautée onion, silverbeet leaves, and mushrooms (without the water) in olive oil. Add cooked brown rice, a splash of leftover mushroom water, and soy sauce to taste.

Top with fried egg, a handful of micro herbs, and torn nori sheet.
