This week we've chosen to highlight comforting braises and stews! As the weather turns cooler for most of us, the soothing nature of a bubbling braise or simmering stew warms the heart. We start out with braised short ribs, move into a creamy pumpkin curry and finish off with a comforting beef stew. Happy cooking!
These braised ribs are packed full of flavor thanks to aromatics like lemongrass, ginger, garlic and scallions. Don't have an instant pot? This recipe will work well on the stove top, too! Just follow the method and then once you add the short rib back in, simmer over low heat for 2-3 hours, or until very tender.
Leftover short ribs from last night? These lettuce wraps are the perfect thing! This recipe calls for ground beef, but feel free to swap in shredded short ribs instead. It's a great dish to lighten up the week and bring a bit of brightness to Monday!
Pumpkin puree and coconut milk thickens this beautiful vegetable curry. Laden with fragrant spices and topped with cilantro, it's an easy, delicious curry you'll make on repeat!
Use that leftover squash to make this beautiful roasted acorn squash with bomba sauce, feta, hot honey and hazelnuts! Serve this with a side of rice for a delicious weeknight dinner.
Seared wedges of cabbage are topped with wine and stock and cooked until melty and delicious. Top it with crème fraîche or sour cream, lemon and fresh herbs and serve alongside rice or potatoes for a delicious vegetarian dinner!
Potatoes and green peas are simmered in a tomato and spice enriched curry, to give you a hearty, satisfying one-pot meal. Serve with any flat-bread or rice for a quick weeknight comfort.
