THE GROCERY LIST
(the must-haves!)


4 large Russet potatoes
2 lbs firm tofu
Non-dairy yogurt
Sprouts of choice
Baby arugula
2 avocado
2 packs soba noodles
8 oz broccolini
3-5 shiitake mushrooms (soaked if using dry)
Ginger
3 large sweet potatoes
Parsley
3 lemons
1 clove garlic
Cashews
Fresh sage leaves
2 roasted red peppers (homemade or from a jar)
1 lb pasta of choice
Egg replacer of choice 
Vegan sandwich spread
4 limes
White or chickpea miso 
Lacinato kale
Napa cabbage
Carrots
Edamame
Hemp seeds
Full fat coconut cream
Vegan Dark Chocolate
Hazelnuts

THE RECIPES
Baked Potato Tofu Sandwich

Call it a sandwich or call it a stuffed baked potato, this loaded dish has it all. Double up on the sauce to use for another night, and make extra tofu for tomorrow.

Feedfeed Tip Feel free to use a sweet potato or winter squash as the vessel for this 'sandwich' if that is what you have on hand.

 
Ginger Sesame Soba Noodles with Tofu and Veggies

Get out the tofu from the night before, and do a quick sauté on the veggies. Soba noodles are used here, but feel free to use whatever noodle you have in your pantry, and make extra to use later in the week.

Feedfeed Tip The key to non-sticky soba noodles is a rinse in cold water when they are done cooking. Since they get added into the pan for a quick sauté with the veggies in this dish, they get warmed right back up.

 
 
Crispy Sweet Potato Fries with Tahini Sauce

Use the extra sauce from a few nights back to drizzle on these sweet potato fries. And if fries don't sound like enough for dinner, serve with some avocado toast.

Feedfeed Tip The trick to super crispy baked fries is to not overcrowd the baking dish. Be sure there is at least 1/4 of an inch in between each one.

Avocado 'Egg' Sandwiches

This recipe calls for egg-replacer, but you can also use scrambled tofu. Just drain and dry a package of tofu; season it with some salt and spices, like cumin and paprika; and sauté it in olive oil for about 7-10 minutes.
