Black Bean And Tofu Scramble Breakfast Tacos With Pico De Gallo

I didn't get to post my #BreakfastTacos from this morning; but I'm a firm believer in breakfast foods at any meal so here they are now. Tofu scramble with black beans, pico de gallo, avo, dollops of almond milk cream cheese, red onion, cilantro, hot sauce and lime wedgies -@plantbasedblonde

Recipe

Serves 4 

Ingredients

1/2 cup chopped onion

2 jalapeños, seeded and chopped

1/3 cup pico de gallo

1 tsp avocado oil

1 block firm or extra firm tofu

1 tsp chili powder

1 tsp garlic powder

1 tsp cumin

1 tsp smoked paprika

1 tsp turmeric

1 tbsp nutritional yeast

Water, as needed

Salt and pepper to taste

1 cup canned black beans, drained and rinsed

Corn tortillas and avocado slices, for serving

Directions

Combine all spices and nutritional yeast in a bowl and stir in a few tablespoons of water. Over medium flame, heat avocado oil and sauté onions and jalapeños until soft. Toss in pico de gallo and sauté for a few a minutes more.

Lower heat and crumble tofu block into the pan. Pour the spice sauce overtop and stir to incorporate. Add black beans. Once warm and well combined, assemble your tacos with whatever fix-ins you desire! Enjoy!
