1 pack rice noodles (or noodles of choice)
1/2 block firm tofu; diced
1 bell pepper, diced
1 cup broccoli florets
1 onion, diced
2 garlic cloves, minced
1 tablespoon nut butter
1 tablespoon hoisin sauce
3 tablespoons warm water
1 tablespoon soy sauce, plus more to taste
Salt and pepper, to taste
Chili garlic sauce (optional)
Olive oil, as needed
Sesame seeds (optional), for garnish
In a small bowl, mix nut butter, hoisin sauce, soy sauce, chili garlic sauce (to taste; optional), sesame seeds(if using) and water. Add in the tofu and stir until all the pieces are coated. Let marinate for about 20 minutes or more.
Heat oil over medium-high heat in a large pan. Fry the garlic and onion until soft; about 3 minutes. Add in the tofu and remaining sauce. Fry for about 10 minutes or until the tofu is browned.
Add in the bell pepper and cook for another 5 minutes. Stir in the broccoli and cook until soft, but be careful not to overcook or it will wilt.
Stir in your noodles, and add extra soy sauce if needed. Serve!
