1 1/3 cup flour
1/2 cup walnuts
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 cup butter, softened
3/4 cup powdered sugar
1 teaspoon vanilla extract
apple butter (can also use pumpkin butter, etc.)
Preheat oven to 350 F.
Combine top 5 ingredients in food processor.
Pulse 4-5 times until nuts are fully incorporated into flour.
In mixer, cream butter and sugar until light and fluffy, about 3-4 minutes.
Add dry mix to the creamed butter. Mix well. Add egg, vanilla and mix until fully combined.
On prepared baking sheet, add spoonfuls of dough. Using a slightly wet thumb, press into the center of each cookie. Fill well with apple butter.
Bake until golden, about 20 minutes. Remove to cool and enjoy.
