Sage Apple Tonic

serves 2 to 3
INGREDIENTS
1/3 cup fresh sage leaves
2 cups apple juice or apple cider
2 limes, juiced (about 1/4 cup)
1 large lemon, juiced (about 1⁄4 cup)
Sea salt, to taste
3-4 ounces mezcal, or to taste
Ice cubes, for serving
THE PREP
Use a muddler or a wooden spoon to crush the sage into the apple juice at the bottom of a cocktail shaker. Add the lime and lemon juices and a few pinches of salt, as well as the mezcal. Shake vigorously, then strain out over ice.
