Sriracha Sweet Potato Breakfast Casserole

  • 2 tablespoons butter, divided
  • 3 sweet potatoes, peeled and diced
  • Kosher salt and black pepper, to taste
  • 1 small yellow onion, diced
  • 1/2 green or red bell pepper, diced
  • 3 strips of bacon, cut into lardons
  • 10 large eggs, beaten
  • 1/4 cup milk of choice
  • 2 tablespoons Sky Valley Sriracha, plus more to taste
  • 2 cups shredded cheddar cheese
  • Fresh chives, chopped for garnish

Method

  • Step 1

    Preheat oven to 400°F. Grease a 9x13 baking dish with 1 tablespoon of butter.

  • Step 2

    Add sweet potatoes and season with salt and pepper, roast for 15 minutes.

  • Step 3

    Remove when done, but keep the oven on.

  • Step 4

    Melt remaining 1 tablespoon butter in a pan and add onions and bell peppers. Sauté for 3-5 minutes or until slightly softened. Set aside.

  • Step 5

    Add bacon to pan. Cook until preferred doneness. Drain and set aside.

  • Step 6

    When sweet potatoes are done roasting, add onions and bell peppers to the baking dish and toss well.

  • Step 7

    Add eggs, milk, and Sky Valley Sriracha in a bowl and whisk well. Season with salt and pepper. Pour the egg mixture into the baking dish and sprinkle cheese on top. Bake for another 15 minutes.

  • Step 8

    Garnish with cooked bacon and chives. Allow the casserole to cool slightly before serving.
