Chocolate Hazelnut Thumbprint Cookies

Forget about love and marriage (and the horse and carriage); the truest love is shared between Chocolate and its Hazelnut—as it is the East and Hazelnut is the sun!

This week, I tested Charlotte Ree’s Chocolate and Hazelnut Thumbprint Cookies. Why? Because who doesn’t love Chocolate and Hazelnut? The pair are as iconic as mac and cheese, peanut butter and jelly, and of course Kate and William.

Now, I have something to tell you guys, I suck at making cookies. I always make awful ones, and that might be because I am my toughest critic, but the cookies either come out too cakey or too dry etc etc. So, following a recipe by a community member I have been following for a while I had a surge of confidence, I could do this! And you know what my friends, these cookies were marvelous! Now let’s get baking.

Charlotte Ree measures her ingredients by weight, if you don’t, you probably should as well since you will have the most consistent finished product if you use weight measurements. But if you don’t own kitchen scales or have no idea what a gram is, have no fear, we converted the recipe to fit the imperial measurements too.

I tested two batches of dough, one with and without salt. The original recipe does not call for it in the recipe, but personally I need a little salt to balance all of that sugar and chocolate. In my opinion salt is necessary and I added ½ teaspoon of kosher salt. But with every new recipe, make it the way it was intended and tweak to your preference later. Secondly, I had two batches baking at two different times, one for the intended 13 minutes and the other for 17. I preferred the 17 minute cookies because there was a little more crunch on the edges and the center was still perfect. But to each their own! We don’t need to get in a tizzy over chewy cookies vs. crispy Cookies. Everyone is welcome here.

Lastly, I am in firm belief that thumbprint cookies were invented by people with no nails. Because I kept getting cookie dough stuck in my nails (gross) and couldn’t get that perfect circular indent! So, I used a teaspoon measuring tool with a deep circular bottom to push my cookies down creating the perfect circular indent. You could also use a spoon with a similar shape, a marble… let your household clutter work for you! I know, I’m a genius. -- Sahara Bohoskey, Community Manager

Chocolate Hazelnut Thumbprint Cookies by @Charlotteree

Ingredients Needed:

9 tablespoons unsalted butter, at room temperature
1/2 cup caster sugar
1 teaspoon vanilla extract
1 egg
1/2 cup dark chocolate chips (4 1/2 ounces)
11/2 cups all-purpose flour, sifted
4 tablespoons cocoa powder, sifted
1 cup chocolate hazelnut spread
Sea salt, to serve
