Coconut Carrot Cake Banana Bread

INGREDIENTS
1 1/4 cup all purpose gf flour
1 tsp baking soda (@bobsredmill )
1 tsp cinnamon (@simplyorganicfoods )
1/2 tsp salt
2 ripe bananas
1 cup shredded carrots
1 egg or flax replacement
1/3 cane sugar
2 Tbsp melted coconut oil
1/4 cup shredded unsweetened coconut
1/4 cup chopped walnuts
1/3 cup vanilla dairy-free yogurt
Glaze:
1/4 cup powdered sugar
1/3 cup yogurt
DIRECTIONS
Preheat oven to 350F.
In a small bowl, mix flour, baking soda, salt and cinnamon.
In a large bowl, with a hand mixer, combine banana, sugar, egg, yogurt, vanilla and carrots until well blended.
Add in your coconut oil. Slowly add in flour and blend. Once mixed well, add in coconut and walnuts. Transfer to a greased loaf pan.
Bake for 45 - 55 minutes or until pick comes out clean.
For the glaze, mix glaze ingredients with a hand mixer. Pour slowly over cooled bread and sprinkle with additional walnuts.
