Serves 2

Ingredients
2 bone in pork chops 
Salt and pepper, to taste
1 tbsp olive oil
3 cloves garlic, unpeeled
2 sprigs fresh thyme
2 tbsp butter


Directions
Preheat the oven to 450˚F. Add the oil to your skillet and heat over medium heat until shimmering. Season the pork generously with salt and pepper, then add to the pan. Add the garlic to the pan as well and cook until the pork is deeply golden brown, about 2-3 minutes. 

Flip the pork and cook on the other side for about 2 additional minutes. Remove from heat and top with butter and fresh thyme. Transfer the skillet to the oven and roast for about 8-10 minutes, or until cooked through (145˚F on an instant read thermometer). 

Add the pork to a platter and top with any drippings that have collected at the bottom of the pan. Tent with foil and let rest for about 10-12 minutes before carving.
