ingredients

For the Energy Balls:

  • 1 cup pitted dates, soaked in warm water for 10 minutes and drained
  • 1/2 cup almond flour
  • 1/4 cup chocolate plant protein powder
  • 2 tablespoons cacao powder
  • 1/4 cup freeze-dried raspberries, crushed into powder
  • 3 tablespoons maple syrup
  • 1 tablespoon almond butter (or other nut/seed butter)
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • 1/4 cup vegan dark chocolate chips
  • 1 to 2 tablespoons water (only if needed to bind the mixture)

ingredients

For the Chocolate Coating:

  • 1/2 cup vegan dark chocolate chips
  • 1 teaspoon coconut oil
  • Additional crushed freeze-dried raspberries, for garnish

Method

  • Step 1

In a food processor, combine the soaked dates, almond flour, chocolate plant protein powder, cacao powder, maple syrup, almond butter, vanilla extract, and sea salt. Blend until a sticky dough forms. If the mixture is too dry, add water 1 teaspoon at a time until it holds together.

  • Step 2

Gently fold in the crushed freeze-dried raspberries and vegan dark chocolate chips. Avoid overmixing to keep the red color visible throughout the dough.

  • Step 3

Roll the dough into 1-inch balls (about 1 tablespoon each) and place them on a parchment-lined tray.

  • Step 4

In a microwave or using a double boiler, melt the dark chocolate chips with coconut oil until smooth.

  • Step 5

Dip each ball into the melted chocolate, letting excess drip off before placing them back on the tray.

  • Step 6

Before the chocolate sets, sprinkle each energy ball with extra crushed freeze-dried raspberries for a stunning red velvet effect. Chill in the fridge or freezer until the coating is firm.

  • Step 7

Store in an airtight container in the fridge for up to a week or freeze for longer storage. Enjoy them as a quick snack, dessert, or post-workout treat!
