For the Truffles:
- 1/2 cup frozen blueberries, thawed and drained
- 1 cup oats
- 1 scoop vegan vanilla protein powder (optional)
- 2 tablespoons maple syrup (or agave syrup)
- 1 tablespoon lemon zest
- 1 tablespoon fresh lemon juice, plus more as needed
- 1 teaspoon vanilla extract
- Pinch of sea salt

For the White Chocolate Coating:
- 1/2 cup dairy-free white chocolate chips
- 1 teaspoon coconut oil
Method
Step 1
Add the thawed and drained blueberries to a food processor and blend until mostly smooth. (If mixing by hand, mash the blueberries well with a fork until smooth.)
Step 2
Add oats, protein powder (if using), maple syrup, lemon zest, lemon juice, vanilla extract, and sea salt to the food processor.
Step 3
Blend until a thick, sticky dough forms. (If mixing by hand, stir well until fully combined.)
Step 4
If the mixture is too dry (from the protein powder), add an extra 1-2 teaspoons of lemon juice or maple syrup. If too wet, add a little more oat flour (1 teaspoon at a time).
Step 5
Scoop out small portions and roll them into balls.
Step 6
Place on a parchment-lined plate and freeze for 15-20 minutes until firm.
Step 7
Melt the dairy-free white chocolate with coconut oil in the microwave (in 20-second increments) or over a double boiler.
Step 8
Dip each truffle into the melted chocolate, coating evenly, then place back on the parchment-lined plate.

Once all the truffles are coated, drizzle extra melted white chocolate over the top for a decorative pattern.
