  • 1 cup plus 1 tablespoon all purpose flour, divded
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups Cascadian Farm Blueberry Vanilla Granola, divided
  • 1 cup apple sauce
  • 1 egg, beaten
  • 1/4 cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Method

  • Step 1

    Preheat the oven to 350°F. Line a 12 cup muffin tin with paper liners.

  • Step 2

    Into a large mixing bowl, whisk together 1 cup of flour, sugar, baking powder, baking soda, kosher salt, 1 cup of granola, apple sauce, egg, butter, and vanilla extract.

  • Step 3

    Toss blueberries with the 1 tablespoon of flour, then fold into the batter.

  • Step 4

    Fill muffin tins with the batter, filling 3/4 of the way full.

  • Step 5

    Use the remaining 1/2 cup of granola and evenly sprinkle the tops of the muffins before baking.

  • Step 6

    Bake for 20–22 minutes, or until a toothpick inserted it a muffin comes out clean.

  • Step 7

    Cool muffins on a wire rack before serving.
