I'm just going to put this out there...of all the ways to enjoy coffee, my all time favorite is the ever so mysterious mocha.
Now being Italian, I cannot turn my back on the coveted cappuccino. BUT a mocha is something I make every other morning at work—mixing freshly poured espresso and my favorite chocolate hazelnut spread. Ahh my mouth is watering just at the thought of it! So when I came across Laura Kasavan’s (aka Tutti Dolci) Chocolate Chip Mocha Muffins I NEEDED to make them, and when I made them I HAD to share them with you, my friends! First, this recipe is easy peasy—all you need are two mixing bowls, a spatula and a spoon/ ice cream scoop and the ingredients of course but I figure that’s just a given…?
Mocha isn’t just a delicious flavor combination of chocolate and coffee, the origin story for it is a saga as old as time. Mocha, an ancient port in Yemen, exported coffee beans with a rich and distinct flavor of chocolate. As the beans got more popular it inspired more combinations of chocolate and coffee - think, tiramisu and affogato. But to be honest, it’s also a no brainer that people were going to figure out that chocolate and coffee belong together and these muffins are EVERYTHING. My first batch was devoured by TeamFeedfeed in a day, and the second, well I had dibs. So that’s what I’ve been having this week for breakfast and dessert. Chocolate muffins are funny that way, it’s called a ‘muffin’ but honestly it’s a cake, and any time I get a pass eating cake for breakfast is a good day.
