Autumn Salad With Pickled Red Onions, Roasted Chicken, Potato Crisps And Tangy Skyr Dressing

I’m so happy to be teaming up with @IcelandicProvisions in partnership with @TheFeedFeed to celebrate their amazing Skyr - and what better way than with one of my spectacular entree salads. This was my first time trying Skyr and @IcelandicProvisions’s is truly delicious. I made a dressing by blending the Skyr with some deliciousness including honey, horseradish, mustard and fresh chopped mint. It’s one of my favorite things I've made all year. I relish in whatever I can get at my farmer’s market, but grab whatever is local, fresh, and in your region. I started with a base of baby romaine lettuce, beautiful paper thin radishes, kalmata olives, slices of roasted chicken, farmer’s market grapes, marinated red onions, pieces of parsley, pepperoncini, crispy cottage fries, then sprinkled with pomegranate seeds and drizzled with this delightful dressing. roasted butternut squash risotto: Happy Sunday everyone! We are reveling in these cooler temperatures that have finally graced southern California and celebrating our arid version of Fall with this ultra-satisfying Italian rice dish. We partnered with @thefeedfeed and @IcelandicProvisions to create a delicious risotto that is pure autumn bliss. Here, we roast butternut squash in the oven with a drizzle of olive oil until tender and sizzling, before stirring it into the risotto with savory vegetable broth and a pinch of ground turmeric. This tender rice is then finished with freshly-grated parmesan cheese and Icelandic Provisions plain skyr to make this one the creamiest risottos we have ever tasted. #IcelandicProvisions #FeedFeed #Ad

Have you ever tried skyr before? We’re stoked to be working with @icelandicprovisons and @thefeedfeed to help introduce this unique product to the US. Not quite yogurt and not quite cheese, skyr is a cultured dairy product that’s unique to Iceland. We recently made a batch of pönnukökur - thin Icelandic pancakes - and filled them with skyr and fresh fruit. These folded pockets of goodness turned out to be a great in-hand camping breakfast.
