Just because we're still holding tight for spring produce doesn't mean we aren't cooking up a storm! From black bean burgers to tofu to noodle salad to falafel, there's lots to love on this menu! Happy cooking!

THE GROCERY LIST

2 cups cashews
1 cup dried chickpeas
1 cup green split peas
1 (14.5 ounce) can black beans
1 (6 ounce) can tomato paste
1 (32 ounce) carton vegetable broth
1 (32 ounce) carton almond milk
1 (13.5 ounce) can coconut milk
1 pound fusilli pasta
14 ounces buckwheat noodles
1 lemon
1 package pitted Medjool dates
2 red jalapeño peppers
3 red bell peppers
2 heads garlic
2 white onions
1 red onion
1 cucumber
1 head baby lettuce
4 carrots
3 ribs celery
1 (1-inch) knob fresh ginger
1 bunch Thai basil
