This Middle Eastern dish is made by frying balls of ground chickpeas. It's typically served with pita or a salad, and hummus or a tahini sauce. There are plenty recipes below that are baked if you want a lighter version; they still manage to get the crispy exterior and creamy interior so critical to the dish. Once just a common street food, falafel has come to be popular all over the world as a delicious vegetarian lunch or dinner option.
