This crispy chocolate quinoa and seed bars are the perfect chewy sweet snack on the go.

ingredients

  • 1/2 cup dates
  • 1/2 cup nut butter
  • 1/3 cup plant-based milk
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon sea salt
  • 2 cups puffed quinoa
  • 1/4 cup sesame seeds
  • 1/4 cup chia seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup flax seeds⁣
  • 1/3 cup dark chocolate chips
  • 1/8 cup plant-based milk, for topping

Method

  • Step 1

    Line a 20cm square baking tin with parchment paper.

  • Step 2

    In a blender or food processor, mix the dates and the nut butter until a paste is formed. Add the milk, cocoa powder and salt and mix until combined.

  • Step 3

    In a big bowl, add the quinoa puffs, the seeds and the date mixture. Mix until fully combined. Press the mixture evenly into the lined baking tin. Place the tin in the freezer while making the chocolate coating.⁣

  • Step 4

    In a double boiler, melt the chocolate with the milk. Pour the chocolate on top of the bars and coat evenly. Refrigerate for a couple of hours before cutting into squares. Enjoy!
