Recipe Of The Day: Coconut & Blueberry Ice Pops

with Coconut, Blueberry, Cinnamon, and Ginger Ice Pops

We're starting to reach that time of year when every day is unavoidably HOT. Our favorite way to cool down? Ice pops! These picture-perfect treats find the perfect balance between rich coconut cream and a fruity summer jam. Go ahead and freeze a double batch, because you're definitely going to need 'em.
 
Ingredients Needed:

1 1/2 cups blueberries, fresh or frozen
2 tablespoons filtered water
1 can coconut milk (13.5 fl oz)
1 cup canned coconut cream
1/3 cup pure maple syrup, grade B (*more or less to taste)
1 teaspoon pure vanilla extract
1/4 teaspoon cinnamon
1/4 teaspoon ground ginger
