Juggling working from home, as well as parenting full time is the obstacle all parents are facing right now. Although I’m not a parent, I am an aunt to a wonderful 7 year old, whose passion and fervor for activities rivals anyone I’ve ever met. And while I’m enjoying the extra FaceTime calls with him, I know my brother and sister-in-law are looking for anything to keep him occupied! Lunch time on the weekends has now become lunchtime all of the time and I’m here to help. I’ve rounded up 5 (mostly) healthy recipes that are delicious and easy for kids to help out with (hello distractions!), giving you that twenty minutes to devote to that conference call.

My nephew has had a serious obsession with nori (seaweed sheets) since he was a little babe! I love the idea of tucking tuna inside of here, along with fresh veggies, into one neat little package. Feel free to leave the kimchi out of the kids version (but highly recommended in the adult’s lunch!).
