One Pot Cheesy Cauliflower Pasta with Crispy Bacon Bits

ingredients
- 7 ounces streaky fatty and thinly diced bacon
- 2 1/2 cups water
- 5 ounces pasta
- 1 large cauliflower, diced into small pieces
- 2 large garlic, cloves
- 3 tablespoons olive oil
- 1 teaspoon white pepper
- Pinch of salt
- 1/2 cup grated pecorino
- 1 tablespoon butter
Method
Step 1
In a large pot on a high heat, fry the bacon with a small amount of olive oil until crispy and brown. Take the bacon out of the pot but leave all of the fat in the pot as this will add lots of flavour to your dish.
Step 2
In the same pot on a high heat, combine your water, olive oil, garlic, pepper and salt and bring to the boil.
Step 3
Add your cauliflower into the pot with your pasta. Bing the heat down to medium and simmer all ingredients for 20 minutes or until the pasta is cooked and all the water is absorbed. Stir occasionally throughout the cooking process so the pasta does not stick.
Step 4
Take your pasta off the heat and stir through your cheese and butter. Plate your pasta and sprinkle the crispy bacon and some extra cheese on top. Enjoy!
