As the days get longer, time in the kitchen should get shorter! Here's what we think you should be making this week. 

THE MENU

THE GROCERY LIST
(the must-haves!)

4 medium potatoes
1 small head of broccoli
6 vine tomatoes 
scallions
basil
7 ounces of smoked salmon
1 lb block feta
3 quarts store bought chicken or vegetable broth
2 shallots
Arborio Rice
1 container Mascarpone cheese
Parsley
Dry white wine (or replace with chicken stock)
1 bunch asparagus 
1 large hunk Parmesan cheese
1 lb spaghetti
2 cups baby heirloom tomatoes 
1 small onion 
2-3 cups baby spinach
1 package store bought pita bread
4 chorizo sausages
1  cup Greek yogurt
4 lemons
Cilantro
2 store bought refrigerated pie dough
2 ½ pints cherry tomatoes
3 ears of corn
Fresh thyme
2 oz diced pancetta
4 mini seedless cucumbers
Small red onion
Small green bell pepper
1 cup kalamata olives
5 cups of mixed blueberries and blackberries
 

PANTRY ESSENTIALS

THE RECIPES
Mini Salmon Frittata by @thehuiatree

Meal prep at it's finest! Make a batch of these mini frittatas and pop them in fridge or freezer to snack on all week long. Keep the smoked salmon on the side and just add when serving to preserve the freshness.

Feedfeed Tip When working with this many eggs, crack each into a small ramekin before adding them to your larger mixing bowl. This way you can monitor if any bits of shell fall into the mix. Another quick tip is that if you do have a tiny bit of shell to remove, use another egg shell. The shell will act as a magnet making removing any broken shells quick and painless.
Feedfeed Cheesy Asparagus Risotto

Risotto gets a bad rap for being overly fussy, but it's actually quite simple and doesn't require many ingredients. If you don't have time to stir the rice constantly (which is what makes it creamy!) just add all of the liquid at once and cook it more like a pilaf. The result will not be risotto, but it will be delicious!

Feedfeed Tip Don't throw away those asparagus trimmings! Add them to the simmering stock you'll use to make your risotto; it will impart it with a delicious asparagus flavor.

One pot pasta FTW! That's right, no separate boiling required, this recipe cooks all in one pot!

Feedfeed Tip This recipe is endlessly adaptable, so use whatever greens or vegetables you have on hand. Have some extra wine laying around? Use that as some of the cooking liquid! As long as the liquid to pasta ratio is the same, the options are endless with this technique.

Crunchy, salty, refreshing and creamy. This salad hits all the right notes. Serve it with some of your leftover mini frittatas from earlier in the week for a complete meal.

Feedfeed Tip If you plan of eating this salad leftover, be sure to remove the seeds from the cucumbers and tomatoes. It will keep the salad fresh longer. Pick up a rotisserie chicken to quickly turn this salad into a filling dinner.
