One Pot Pasta with Cherry Tomatoes and Oregano

Serves or Makes: 4
- 1 pound spaghetti
- 2 cups heirloom tomatoes (cut in half)
- 1 small onion (sliced)
- 1/ 3 cup fresh basil (roughly chopped)
- 3 cups baby spinach
- 2 garlic cloves (sliced thinly)
- 2 1/ 2 teaspoons salt
- 1 1/ 2 teaspoons black pepper
- 1 teaspoon red pepper flakes
- 1 1/ 2 teaspoons oregano
- 4 1/ 2 cups water
Add all ingredients to a large stock pot. Set over medium heat and bring to a simmer. Cook, stirring often, for 9-12 minutes or until pasta is al dente and a creamy sauce forms.
