ingredients

  • 1 pound spaghetti
  • 2 cups heirloom tomatoes (cut in half)
  • 1 small onion (sliced)
  • 1/ 3 cup fresh basil (roughly chopped)
  • 3 cups baby spinach
  • 2 garlic cloves (sliced thinly)
  • 2 1/ 2 teaspoons salt
  • 1 1/ 2 teaspoons black pepper
  • 1 teaspoon red pepper flakes
  • 1 1/ 2 teaspoons oregano
  • 4 1/ 2 cups water

Method

  • Step 1

    Add all ingredients to a large stock pot. Set over medium heat and bring to a simmer.  Cook, stirring often, for 9-12 minutes or until pasta is al dente and a creamy sauce forms.
