4 homemade pita
4 chorizo sausage, casing removed
1 cup yogurt
3 tablespoons lemon juice
2 garlic clove, minced
salt and freshly ground black pepper, to taste
2 tbsp chopped cilantro
Before charring the pita, brown chorizo in a skillet on medium high heat. Once the fat starts to render lower the heat to medium. Add eggs directly to the chorizo pan and fry them with the chorizo until cooked to your liking.
For the yogurt: Mix 1 cup of Greek yogurt with 3 tablespoons of lemon juice. Add chopped garlic (optional.) Season with salt and pepper
Char pita in a dry frying pan, then set aside. Assemble by topping pita with garlic yogurt, then top with chorizo, eggs and chopped cilantro and serve.
