It's official, summer is here! Here are a few of our favorite summer meals so you can spend less time in the kitchen and more time enjoying the sunshine!

THE MENU
Sunday Salmon Burgers with Avocado and Mango Salsa
Monday Roasted Cauliflower with Parmesan Breadcrumbs and Spicy Red Pepper Sauce 
Tuesday Sweet Potato and Bison Breakfast Skillet with Leeks and Arugula
Wednesday Rice & Zucchini Noodles with Sun-Dried Tomato Pesto
Thursday Green Gazpacho with Corn and Cucumbers
Friday Pesto Pasta Salad with Roasted Tomatoes, Pine Nuts and Mozzarella

THE GROCERY LIST
(the must-haves!)


Brioche Buns (or crisp lettuce), for serving with salmon burgers
1 lb. fresh salmon, skin removed and cut into chunks
1 medium yellow onion
1 (8 oz) box or bag of Panko breadcrumbs
3 large avocados
1 large mango
2 jalapeño
1 small red onion
3 medium limes
1 bunch fresh cilantro
1 (8 oz) Jar Roasted Red Peppers
1 (32 oz) container Greek Yogurt
1 (15 oz) Can Breadcrumbs
1 large head Cauliflower 
1 (16 oz) container grated Parmesan Cheese
1 bunch Italian Parsley
1 package corn tortillas
2 medium sized sweet potatoes
1 lb ground bison or beef
1 (5 oz) container of baby arugula 
2 large leeks
1 (8 oz) container pepitas (pumpkin seeds)
8 oz brown rice pasta
4 small zucchini
1 (8 oz) jar sun-dried tomatoes, packed in oil
2 garlic cloves, minced
2 lemons
2  bunch basil leaves
1 (8 oz) container pine nuts
6 cups baby spinach
2 large cucumbers 
1 bunch red radishes 
1 green bell pepper
1 pint yellow cherry tomatoes
1 quart vegetable stock
2 ears of corn
hot sauce of choice
1 pint grape tomatoes
1 pound whole-wheat penne pasta
4 ounces fresh mozzarella
2 ripe pineapples
1 pint blueberries
1 pint raspberries
2 kiwi
1 lb strawberries
 

PANTRY ESSENTIALS
(things we assume you have,
but if not, stock up!)


1 dozen eggs
Chili powder
Garlic powder
Smoked paprika
Salt
Pepper
Olive oil
Crushed Red Pepper Flakes
1 lb Unsalted Butter
1 bottle Red Wine Vinegar
1 bottle Dijon Mustard 
Cumin
1 Head Garlic





OPTIONAL FLAVOR ENHANCERS

Salmon Burgers with Avocado and Mango Salsa by @spicesinmydna

Summer calls for fuss free meals that are full of flavor, which is everything these delicious salmon burgers are! Serve on a brioche bun with spicy mayo, or on top of lettuce for a lighter meal.

Feedfeed Tip When making fish burgers, be sure not to puree the fish too finely; you want the mix to be chunky not mushy. If you don't have a food processor, you can chop the fish by hand. 
Roasted Cauliflower with Parmesan Breadcrumbs and Spicy Red Pepper Sauce by @craveworthybites

Meatless Monday never looked so good. We like serving roasted cauliflower in taco form; chop up the roasted cauliflower, add some lettuce and other toppings of choice and slather the whole thing with this addicting spicy red pepper sauce.

Sweet Potato and Bison Breakfast Skillet with Leeks and Arugula by @sophisticatedcaveman

Breakfast for dinner is always a win and this satisfying skillet comes together in just 15 minutes.

Feedfeed Tip Bison is much leaner than beef and usually cooks a bit faster. Be sure to keep an eye on it so you don't over cook it. If beef is more widely available in your area, feel free to substitute!

Got 10 minutes? Good! You can have these flavorful noodles on the table in the time it would take you to settle on take-out.

You'll start to crave this cooling and refreshing soup on hot summer days!

Feedfeed Tip Since gazpacho is served cold, you need to be sure to season it properly to make the flavors really pop. Don't be afraid to go a little heavy on the salt, acid and spice; the base of this gazpacho is mostly water so it needs the extra hit of flavor!
Pesto Pasta Salad with Roasted Tomatoes, Pine Nuts and Mozzarella by @lastingredient 

Roasting the tomatoes before adding them to this pasta salad really amps up the flavor. Make a double batch of this salad to snack on all weekend long!

Yogurt and Fruit Pineapple Bowls by @miebepaul

Once you start enjoying your morning yogurt out of a whole pineapple (!) you'll never want to go back to a regular bowl again. This recipe calls for coconut yogurt, but feel free to use your leftover greek yogurt
