Serves 4
 
Ingredients
 
2 large cucumbers peeled (reserve 1/2 of one unpeeled)
8 radishes 
1 green bell pepper
1 cup yellow cherry tomatoes
1 small red onion
1 ripe avocado
Juice from 1 lime
2 tsp cumin
4 cloves garlic
1 jalapeño 
1 cup veggie stock
Salt & pepper
2 ears of corn, kernels removed and set aside
olive oil, to taste
hot sauce, to taste 
 
Directions
 
Blend all ingredients (other than 1/2 skin on cucumber & corn kernels) in a large food processor or blender until liquified. 
 
Add raw corn kernels & diced cucumber into the gazpacho & chill for and hour or two. Season to taste and top with hot sauce and olive oil.
